[Recipe] The parisian flan is a staple of french bakery. I used to not like it as a kid because it tasted too mich like eggs, but recently a lot of bakers such as @quentinlechat have worked hard to create a creamier, tastier flan! This is his recipe I am sharing with you.
Sugar Pie dough
Butter: 230g
Almond powder: 40 g
{Wizkid Gifts His Son Boluwatife A Brand New PS5} pinch of salt
Icing sugar: 140 g
Eggs: {Wizkid Gifts His Son Boluwatife A Brand New PS5} (room temp preferentially)
Flour: 380 g
In a bowl with a whisk, whip together the butter, the icing sugar, the salt and the almond powder.
Once everything is mixed together take the dough out of the bowl. Let it rest for at least 1h in the fridge.
Line on a tart or round cake pan 20 cm large, 5 cm high. Let in the frigde for at least 2 hours or in the freezer for 30 minutes.
Flan cream
Milk 350 g
80g of sugar
30 g of cornstach
4 egg yolks (80 g)
50 g of butter
100g gram of whipping cream
½ a vanilla pod or 2 tea spoons of vanilla extract
Put the vanilla in milk and let warm it up in a pot until it starts boiling. Let the tea in the milk for 10 minutes.
In a separate bowl, mix the egg yolk with the sugar then add the cornstarch.
Strain the vanilla out of the milk.
Put 1/{Wizkid Gifts His Son Boluwatife A Brand New PS5} of the milk in the eggs. Mix well and put this back to the pot with the 2/3 left.
Heat everything together while whipping until it thickens. Remove from the heat. Add the butter and the whipping cream.
Pour into the raw tart dough already lined. Bake everything together for 45 min at 170C(340F)
